Classic Caramel Apples (No Candy Thermometer Required)

Caramel apples look intimidating but the actual process is pretty forgiving. Here’s a version that skips the candy thermometer most recipes insist you need.

What You’ll Need

  • 6 medium apples (Granny Smith works best — the tartness balances the sweet caramel)
  • 1 bag (11 oz) soft caramel candies, unwrapped
  • 2 tablespoons milk or heavy cream
  • 6 wooden popsicle sticks or skewers
  • Wax paper or parchment paper
  • Optional toppings: chopped nuts, mini chocolate chips, crushed pretzels, sprinkles

Instructions

1. Prep the apples. Wash and dry the apples thoroughly — any leftover wax or moisture on the skin will keep the caramel from sticking properly. Push a popsicle stick firmly into the top (stem end) of each apple.

2. Melt the caramel. Combine the unwrapped caramels and milk in a microwave-safe bowl. Microwave in 30-second bursts, stirring between each, until fully smooth — usually 2-3 minutes total. Don’t rush this; overheating makes the caramel grainy instead of smooth.

3. Dip the apples. Tilt the bowl and dip each apple, turning to coat evenly, letting excess caramel drip back into the bowl. Scrape the bottom against the bowl’s edge to avoid a thick pool of caramel forming at the base.

4. Add toppings immediately. While the caramel is still warm and sticky, roll the bottom half in your chosen toppings — nuts, chocolate chips, whatever you’re using. It needs to happen fast, before the caramel starts to set.

5. Let them set. Place apples stick-up on wax paper (or stick them into a piece of styrofoam so the bottoms don’t flatten) and let them cool at room temperature for about 20 minutes, or in the fridge for 10 if you’re impatient.

Tips

  • Room temperature apples dip better than cold ones — if your apples were in the fridge, let them sit out for 30 minutes first, since cold apples make the caramel seize and clump
  • Double-dip for a thicker coat — let the first layer set for a few minutes, then dip again for a noticeably thicker caramel shell
  • Storage: keep them in the fridge, and eat within 2-3 days — the apple continues to release moisture over time, which affects the caramel’s texture
